The Sausage is one of mankind's first-ever designed food items, designed to make the most efficient use of animal protein in times of scarcity, dating back to 3300BCE. England alone has over 470 types of breakfast sausage. According to the Food & Agriculture Organization, over-consumption of animal products means meat will become scarce. To answer this a chef of molecular gastronomy, a master butcher and a designer have looked at new ingredients (insects, nuts and legumes) to create the "future sausage".
