In 1884, home cooks were brewing soups over an open fire and small stoves. They were getting meat from their local butchers and doing all the trimmings themselves. It's not 1884 anymore, and most cooks get their products from the local grocery store. The original cookbook "Fifty Soups" by Thomas J. Murrey's was lovely, but it was poorly formatted and inaccessible by modern home cooks. But not anymore! My version of "Fifty Soups" is inspired by what Murrey started with and completely transforms the recipes into soups that are fit for everyday households. From simple stocks to complex chowders, this cookbook is loaded with soups that can be cooked year round. I have a made it my mission to take cookbooks that have fallen out of copyright and renew them for the contemporary home chef. Instead of paragraph recipes, standard recipes with ingredients that modern cooks can locate at the grocery store. At the end of the cookbook, I've offered up an excerpt from my latest cookbook, The Domestic Beast Cookbook.
